Segundo Aurelio Lasso is a small farmer from the community of Las Aguilas in La Argentina, Huila. This pink bourbon comes from his Finca 'El Mirador', a 2-hectare farm at an altitude of 1,850 m.
Segundo is a tireless worker. Together with his wife Gisella and daughter Nicole, they grow varieties such as Gesha, Rose Bourbon and Caturra with the main goal of achieving quality.
Segundo also supports its local community, both by providing employment during the harvest and by supporting its workers in growing their own coffee.
PROCESSING
This batch is naturally processed with an extended 46-hour anaerobic fermentation of cherries. The cherries are selectively hand-picked, washed, fermented in the absence of oxygen for 46 hours, and then dried in a marquesinha (a specialized drying tent) for 20-25 days, with the coffee being turned once a day to ensure consistent drying.
