Many of us know China for its high-quality tea, but it was not very well-known in the world of fine coffee until now, due to the insufficient quality of the beans and poor processing.
With the inclusion of this coffee in our offer, we want to disprove this stereotype.
The farm from which this lot comes is run by a mother and daughter in Yunnan province, which is famous for green tea production.
The Luo family founded the farm back in 1987, but only with the arrival of their daughter Jean Luo in the family business did they focus on exporting their coffee. Exporting made it possible to create job opportunities for many families, who were thus able to purchase their housing.
Processing
The farm uses natural compost to fertilize the coffee trees, for irrigation they use a natural source of water - a mountain spring is located directly above the farm.
Coffee cherries are selective, hand-picked, and later go through a mechanical depulper. Subsequently, the coffee is fermented in concrete tanks for 24-30 hours. After fermentation, the coffee is washed to remove excess parchment. The coffee is then dried on raised "beds" where it dries for 30-38 days.
