Juan Martinez's ancestor, also named Juan Martinez , came to Xalapa, Mexico from Spain in the mid-19th century. Today, the Martinez family continues the tradition of cultivating the land in Coatepec, Veracruz, and growing excellent selection coffee.
In 2018, the Martinezes began renovating their farm with the intention of reviving the soil's natural fertility. They began using organic fertilizers and compost to nourish the soil and grow varieties resistant to coffee leaf rust. The Sarchimor variety is the result of a cross between the Villa Sarchi (natural Bourbon hybrid) and Timor varieties.
PROCESSING
The coffee is selectively hand-picked by workers and processed on the farm. The cherries are pulped on an ecopulper and then placed in concrete tanks for fermentation. After fermentation, the coffee is washed in clean water and dried in a mechanical dryer for 70 hours. The parchment is left to rest on the farm for 60 days.
